Cocktail of the Month Limerick Salad Green Mist
  • ¼ cup Irish Mist
  • ¾ cup oil
  • ¼ cup red wine vinegar
  • 3 tablespoons
  • Dijon mustard
  • 2 tablespoons honey
  • 6 small tomatoes, peeled and sliced
  • 1 small red onion, thinly sliced
  • Mixed lettuce
  • Toasted sesame seeds


Combine Irish Mist, oil, vinegar, mustard and honey. Set aside. Arrange tomato and onion slices on bed of lettuce. Spoon dressing over salad. Sprinkle with sesame seeds. Serve 6. To peel tomatoes drop into boiling water for 30 seconds. Remove and peel skin. Core tomatoes and cut into thin slices.
